Tequila and types, where do they come from?

Tequila is an alcoholic beverage produced by distilling the must obtained from the heart of the blue agave.

The plant that gives rise to this popular spirit has a centre that is also known as mezcal. In Nahuatl, mezcal means "the house of the moon" and refers to the centre, the core, the essence.

In the mid-16th century, a Spaniard with a taste for experimentation began to make mezcal in the lands of Tequila, given the abundance of blue agaves in the area.

That was the beginning of an industry, sometimes clandestine but always very popular, of the drink that is now the flagship of Mexican culture, and of which Spain is the third largest importer in the world.

Classification of tequilas

According to the Tequila Regulatory CouncilThere are five types:

  • Joven or oro: the result of blending white tequila with reposado, añejo or extra añejo tequila.
  • Reposado: is matured for at least two months in oak or holm oak.
  • Añejo: it must be matured for at least one year in direct contact with the aforementioned woods.
  • Extra añejo: this is the one with the longest maturation process, at least three years.
