Tastings are sensory analyses in which our whole body receives information:
- View: The colours, the brightness, the shades, the cleanliness... These are some of the characteristics that we perceive with our eyes.
- Smell: As we taste more and more, our sense of smell becomes more acute. With practice, we will be able to create an olfactory memory that will help us to identify up to 10,000 aromas.
- Taste: the tongue can only distinguish four basic tastes. Sweet at the tip, salty in the middle, sour at the sides and bitter at the back. All these flavours can be perceived in any wine but, depending on each one, there will be flavours that stand out above the others. In that case we will know, simply by tasting it, what type of grape it is, what vintage, in what conditions the vine was grown and even if it was aged for some time and in which barrel it was aged.
- Hearing and touch: Although they do not perceive the taste of the wine, these senses are involved in the tasting through other types of sensations. The weight of the glass, the texture of the label on the bottle, the sound of the liquid hitting the glass... All these stimuli participate in the experience and help to store in our memory the memory of what we have experienced.
