Which are the best cavas?

It is clear that the answer to this question is a matter of taste. Although it is true that within the world of sparkling wines there are different varieties and qualities, it is difficult not to make a subjective choice.

Today we would like to talk to you about how to choose a cava and propose two of our favourite options with which it is impossible to go wrong.

The first way to differentiate between sparkling wines is by their ageing, which can be found on the round label on the top of the capsule. Depending on the colour of this label:

  • White: it is a cava. In this case, the ageing period from tirage to disgorgement is 9 to 15 months.
  • Green: this is a reserve cava. This means that the ageing period from tirage to disgorgement is 15 to 30 months.
  • Black: ageing from tirage to disgorgement is over 30 months.

Types of cava according to sugar level

Cava brut, cava semi, cava brut nature... what does it all mean? Well, it is no more and no less than the name given to each cava depending on its sugar level. This would be the order:

  • Cava brut nature: the sugar content per litre is between 0 and 3 grams.
  • Cava extra brut: up to 6 grams.
  • Cava brut: up to 12 grams.
  • Extra dry cava: between 12 and 17 grams.
  • Dry cava: between 17 and 32 grams.
  • Semi-dry cava: between 35 and 50 grams.
  • Sweet cava: more than 50 grams.

The variety of grape used to make the drink is also important. The types of white grapes most commonly used to make cava are: Macabeo, Xarel.lo, Parellada, Malvasía and Chardonnay.

Our favourites

If we had to choose the best caves to celebrate Valentine's Day, we have no doubts: Sogas Mascaró and Castillo de Pedregosa would be our winning choices.

Sogas Mascaró is a cava from Vilafranca del Penedès from a winery with a long tradition. Although they began their activity in 1910 as exporters of wines and musts to the United States, in 1987 they decided to specialise, becoming what they are today: experts in cavas.

Castillo de Pedregosa is another of those cavas that has several generations working in its cellars. The Pedregosa Castelo family has crafted this cava with care and wisdom.
