A pleasant surprise, that is what Passió has in store for us. Blanca Terra has reinvented the rosé wine, suggestive colour and pleasant flavour, all from the Malvasia, Cabernet Sauvignon and Merlot varieties.
Elaboration:
Manual harvesting in 12 kg crates and grape selection in the vineyard. Delicate destemming and second grape selection. Light pressing without exceeding 1 kg of pressure, inertised process with CO2 gas to avoid oxidation. Static racking in isothermal tanks after 24-48 hours and fermentation in stainless steel tanks with cooling jackets. Temperature control throughout the process. Resting on fine lees for 4 to 6 months.
Tasting:
Colour: Pale pink with a tendency to salmon.
Aromas: High intensity with aromas of hay mixed with dried flowers. Undertones of acid strawberries with lactic touches, reminiscent of pastry.
Taste: Smooth and fresh entry, with medium acidity and a certain volume on the palate. Slightly bitter finish, which gives persistence.
