Elaboration:
Manual harvesting in 12 kg crates and grape selection in the vineyard. Delicate destemming and second grape selection. Light pressing without exceeding 1 Kg of pressure. Inertised process with CO2 to preserve the varietal aromas and delicate compounds from oxidation. Static racking in isothermal tanks after 24-48 hours and fermentation in stainless steel tanks. Temperature control throughout the process. Resting on fine lees for 5 months.
Tasting:
Colour: Straw yellow with green hues, clean and bright.
Aromas: High intensity with aromas of peach and lactic touches reminiscent of pineapple yoghurt. Undertones of dry Mediterranean herbs such as chamomile and fennel.
Taste: Fresh entry with volume and medium acidity. Finish of
Unctuous and pleasant on the palate, with hints of aniseed on the finish.
